Enough wine to fill only a few old barrels, made entirely by hand, foot and gravity in a small garage winery without electricity, from vineyards worked only by hand and horse. Bottling, labelling and waxing is also by hand. This is a new beat for Burgundy and one of the most exciting projects we’ve come across in recent years.

Camille Thiriet met her partner, Canadian born Matt Chittick, while both were working at Domaine de Bellene in Beaune in 2011. After a few vintages with Steve Pannell in McLaren Vale, Matt is now at home as the winemaker for Aubert de Villaine at Domaine de Villaine in Bouzeron. Camille, on the other hand, had only ever dreamed of making her own Burgundy. After spending time with Rajat Parr and Sashi Moorman at Domaine de la Cote in California, she returned to Burgundy and established Maison Thiriet in a little house across the road from the Chateau de Comlanchien (which appears on Thiriet’s labels). A network of relationships established while at Domaine de Bellene with growers in more than 75 appellations allows Camille to source the very best fruit for her label from organic growers she knows and admires.

In 2016, the first release saw the production of four barrels of Bourgogne Blanc and three barrels of Cote de Nuits Villages. 2017 saw the addition of a single barrel of Bourgone Rouge and 2018 will introduce a Vezelay and a Volnay. Volumes will only ever be tiny - Camille has to move her wines out of tank or barrel when the next vintage comes along as she has capacity for only one vintage at a time, and needs to sell one year’s produce to fund the next.

The wines themselves are beautifully pure, resonant examples of Chardonnay and Pinot. Fresh and penetrating with real energy. They are already poured by Aldo Sohm at Le Bernadin in New York, and at London’s wine mecca Noble Rot, and we could not be more excited to introduce these to the Australian market.

Bourgogne Chardonnay ‘Cuvee Confidentielle’
The name of the cuvée is a reference to the size of the plot, it is so small it’s practically a secret. The vineyard is located in Meursault and the soil is clay and limestone based. The vines are now 30 years old and cultivated using lutte raisonée. Only five barrels were produced in 2017, one of which was new, from François Frère.

Bourgogne Rouge ‘Les Blanches’
Only one barrel and one feuillette were produced in 2017 (450 bottles) from this very small vineyard called ‘Les Blanches’ located in Pommard on mid slope, just above the village. The vines are 70 years old, organically grown, with all soil treatments (tilling, weed control) carried out by Camille’s two horses – Obelix and Véga. The vineyard name refers to the high portion of limestone in the soil giving it a white appearance. The 2017 was aged in neutral french oak to preserve the purity of the fruit. Fermentation was only 14 days with 30% whole bunches and native yeasts.

Cote de Nuits Villages ‘Aux Montagnes’
A 50 year old organic vineyard located in Comblanchien. In 2017, only four neutral barrels of 228 litre from Rousseau and one 336 litre prototype cigar barrel was produced.  There was no new oak used in order to better preserve the purity of the fruit.
